Ingredients:
4 cloves garlic, minced
1 inch ginger, minced
Olive oil
2 tsp curry powder
2 tsp sambal, chili pepper flakes, or hot sauce
4 large tomatoes, roughly chopped
1 can coconut milk
Vegetables of your choosing
Salt, to taste
Squeeze of lime/lemon/calamansi
Directions:
Heat olive oil in a large pan and add the minced garlic and
ginger. Add sambal, chili flakes or hot sauce to the pan,
add the curry powder, and let everything cook for 1-2
minutes, or until aromatic. Add the chopped tomatoes to
the pan and cook until everything breaks down into a
sauce (~5 minutes). Use a fork, spatula or masher to help
break down the tomatoes. Pour in the coconut milk and
vegetables of your choosing. Let the tomato curry simmer
down, stirring occasionally. Add salt and lime juice to
taste. Serve with rice or bread.
