The light licorice notes of fennel and the zesty, tangy addition of the oranges will make this salad the star of any show! This is a super easy recipe to impress everyone at the family gathering.
Ingredients:
1 fennel bulb
2 large oranges
1/4 cup olive oil
1/2 teaspoon salt
1/4 teaspoon pepper
Fennel fronds (to garnish)
Directions:
Shave the fennel bulb into thin slices with a sharp
knife or a mandoline. Peel and cut one of the
oranges into wedges or segments. Combine the
fennel with the orange wedges in a serving bowl. Zest
and juice the other orange into a small mixing bowl.
Add olive oil, salt and pepper to the juice and whisk
until combined. Pour the dressing over the fennel &
oranges and toss gently. Garnish with fennel fronds
and add more salt & pepper to taste.
