Ingredients:
1/2 cup Rainbow Chard (~1-2 large leaves), chopped
Half of a medium-sized onion, diced
Handful of shredded cheese, your choice
4-5 eggs
Olive oil or butter
Note: Feel free to add any other vegetable fillings or
meat you have on hand!
Instructions:
Preheat a large pan on the stove and add
oil or butter to coat. Add chard, onion and
additional vegetables or meat to the pan.
Saute until the chard is wilted and onions
are cooked, about 5-7 minutes. Spread
fillings evenly over the pan and slowly pour
scrambled eggs over the vegetables. Cook
until almost set and sprinkle a handful of
cheese onto the eggs. Carefully fold one
side over the other. Serve on a plate and
enjoy!
