Ingredients:
1 cup carrot tops, finely chopped
4 garlic cloves, minced
1 tsp crushed red pepper
3/4 tsp dried oregano
1/2 cup olive oil
2 Tbsp red wine vinegar
1 tsp salt (or to taste)
1/2 tsp black pepper (or to taste)
Optional: cumin, paprika, lemon juice
Directions:
Combine carrot tops, dried oregano, garlic, red
pepper, olive oil and red wine vinegar in a medium
mixing bowl. Slowly add salt & pepper, stopping to
taste test. Mix well to combine all ingredients (add
optional spices & lemon juice). Let the chimichurri
sauce rest for a minimum of 10 minutes to 30 minutes ahead of serving.
