Calamansi Honey Ginger Tea

As a child, my grandmother always made me tea when I was sick. A comforting, hot cup of tea is guaranteed to lift anyone's mood when feeling unwell! The unique taste of calamansi adds a delightful twist to this beverage. Given its popularity in Hawaii, you can easily find calamansi from a friendly neighbor's garden or a local farmer's market.

Ingredients:
2 cups water
Juice from 2 calamansi fruits
2 inches of ginger, peeled and sliced
2 tablespoons honey


Instructions:
Add sliced ginger and water to a small
pot & bring to a boil. Cover the pot and
steep the ginger for 10-15 minutes. Add
calamansi juice and honey, stir until
honey dissolves. Strain out ginger and
adjust to taste. Enjoy hot or cold.
